To celebrate the change of season, the Liberty restaurant of the Palace Grand Hotel in Varese once again renews its menu, an engaging way for guests to explore the territory, through a sensory journey perfect for expanding their horizons of taste and smell.
Through the a la carte menu, guests will be able to discover a part of what makes the corner of Italy where the Palace is located unique.
Thanks to an interpretation of regional cuisine that is both respectful of the value of history and careful and balanced from a nutritional point of view, you will savor the essence of a culture.
A genuine cuisine of excellent quality, to be accompanied and exalted by wines of the same level, small local productions created to enhance the wine tradition of the province of Varese and emphasize the peculiarities of the cuisine of the territory.
Each dinner ends with a selection of local liqueurs that tell the story of the terroir: centuries-old passions handed down from generation to generation, recipes created by Garibaldians and celebrations of the biodiversity of a generous territory.
The best known is Amaretto di Saronno, an aromatic liqueur made from bitter almonds, herbs and other ingredients, whose recipe dates back to the Renaissance.
Lesser known but strongly rooted in the territory and appreciated by connoisseurs are the Amaro d’Angera, a distillate resulting from the passion and tenacity of a local family that has been collecting and distilling more than thirty herbs from the Alpine region for over a hundred years, and Elixir del Borducan – a bitter that encapsulates the dream and suggestions of a herbalist from Varese who, after taking part in the Expedition of the Thousand in 1860, decided to evoke the intensity of Sicily and the journeys that led him to Algeria, with herbs from Campo dei Fiori Sacro Monte, just a few kilometers from the Palace Grand Hotel.
The selection also includes a sweet bitter with the original name Un quai coss (something in local dialect) and grappas with honey and peach juice.
